内容記述 Antioxidants, such as catechin and vitamin E, are known to act as a strong radical-scavenger against reactive oxygen species in the human body, where there are various metal ions such as sodium, ferric, and magnesium ions. These metal ions may affect the radical-scavenging activity of the antioxidants. In fact, we have previously reported that the radical-scavenging rate of (+)-catechin is accelerated by magnesium ion. Curcumin (CU), extracted from turmeric, has been found to show anticancer and antioxidative activities. In particular, strong antioxidative activity is relate to two 4-propenylphenol moieties in its molecule. On the other hand, CU also possesses an enolic structure, which may interact with metal ions in biological systems. A complex formation between CU and metal ions may affect the electron distribution in the CU molecule, resulting in change in the radical-scavenging activity of CU. Thus, in this study, we demonstrated the interaction and the effect of radical-scavenging activity between CU and metal ions.
