{"created":"2023-05-15T14:56:28.964650+00:00","id":76691,"links":{},"metadata":{"_buckets":{"deposit":"782c546d-9ef8-43b1-b6bb-bde9009d07d8"},"_deposit":{"created_by":1,"id":"76691","owners":[1],"pid":{"revision_id":0,"type":"depid","value":"76691"},"status":"published"},"_oai":{"id":"oai:repo.qst.go.jp:00076691","sets":["10:28"]},"author_link":["781655","781660","781658","781663","781662","781652","781653","781659","781661","781654","781656","781657"],"item_10005_date_7":{"attribute_name":"発表年月日","attribute_value_mlt":[{"subitem_date_issued_datetime":"2019-09-06","subitem_date_issued_type":"Issued"}]},"item_10005_description_5":{"attribute_name":"抄録","attribute_value_mlt":[{"subitem_description":" 2,2-ジフェニル-1-ピクルリヒドラジル(DPPH)ラジカルは抗酸化物質のラジカル消去活性評価に頻用されているが、水にまったく溶けないため水溶液中では共溶媒が必要であり、pHの制御が困難であった。一方、我々は最近、β-シクロデキストリンを用いてDPPHラジカルの水溶化に成功した。1) そこで本研究では、抗酸化成分である(+)-カテキンのDPPHラジカル消去反応に対する溶媒の効果を速度論的に検討した。\n MeOH中、25℃で、(+)-カテキンとDPPHラジカルを混合すると、DPPHラジカルに由来する516 nmの吸収が減少し、(+)-カテキンによってDPPHラジカルが効率良く消去された。DPPHラジカルに対して(+)-カテキンが過剰の条件下で516 nmの吸光度の経時変化を速度論的に解析することにより、擬一次速度定数(k(obs))を決定した。k(obs)値は(+)-カテキンの濃度の増加に伴って増加し、やがて一定値に達した。一方、リン酸緩衝液(0.05 M, pH 7.0)中、(+)-カテキンと水溶化DPPHラジカルとの反応では、k(obs)値を(+)-カテキンの濃度に対してプロットすると良好な直線関係が得られ、その傾きから二次反応速度定数(k)を8.9 × 10(2) M(-1) s(-1)と決定することができた。\n1.I.
