However, very little is known about the mechanism for the radioprotective effect of the food factors. In this study, we compared the antioxidative properties of the eleven food factors, such as scavenging activities of reactive oxygen species and free radicals, the one-electron oxidation potentials, and ionization potentials (IP) calculated by the density functional theory.
